Did you know that black-eyed peas aren't peas at all? They are delicious, though - especially when spiced well and slow cooked on the stovetop with bacon, onion, and olive oil.

1 1/2 cup dried black-eyed peas
1/2 teaspoon garlic powder
1 tablespoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1 tablespoon chopped onion
1 small piece salt pork or thick bacon piece
Soak the peas overnight in enough water to cover. Drain them, and add to a large pan or Dutch oven, covering with about 2 1/2 cups hot water. Add other ingredients and stir. Simmer for 1 1/2 hours or until peas are soft.
