Green Bean Casserole Recipe

Serves/Makes: 8
Ingredients:
1 large onion cut into 1/2 inch slices and separated into rings
5 tablespoons flour, divided
salt and pepper
1 1/2 pound green beans, trimmed
1 tablespoon butter
1 large shallot, chopped finely
10 ounces crimini or white mushrooms
1 cup chicken broth
1/2 cup milk
Directions:
Preheat oven to 425 degrees F. Line cookie sheet with foil and spray with nonstick spray.
Toss onion with 2 T. flour and 1/8 t. salt. Spread onion in single layer on foil. Spray with non stick spray and bake 14 minutes. Toss and rearrange and spray and bake another 15 minutes until crisp.
Bring water to boil in saucepan. Add beans and cook 5 minutes or until crisp. Drain and run under cold water or ice. Drain.
In frypan, melt butter and add shallots. Cook 2 minutes stirring. Add mushrooms and cook 7 - 8 minutes. Add salt and pepper and 3 T. flour. Cook 1 minute. Add broth and milk heat on high to boil. Reduce to low and cook 2 minutes. Add beans. Transfer mix to 2 qt. baking dish and bake 15 minutes. Stir and top with onions and bake 5 minutes until bubbly.
