Oven-Fried Perch Recipe

Ingredients:
1/2 cup margarine
1 1/2 pound perch or cod or haddock fillets
1 egg -- well beaten
1 cup fine bread crumbs
salt -- to taste
pepper -- to taste
lemon wedges (for garnish)
Directions:
Melt margarine in baking dish in 325 F. oven (Do not allow margarine to brown). Dip fish first in melted margarine, then in egg, then in crumbs, coating well; season to taste with salt and pepper.
Bake in preheated 375 F. oven 15 to 20 minutes, or until fish tests done. Garnish with lemon wedges.
