Ingredients:
6 ounces creamed spinach
2 tablespoons chopped red pepper
4 slices ham
1/2 cup chopped water chestnuts
4 eggs
1/8 teaspoon ground nutmeg
salt & pepper to taste
1/2 cup shredded Monterey Jack

Directions:

Preheat oven to 400 degrees. Microwave spinach on high 5-6 minutes.

Grease individual baking dishes, and place a piece of ham in each.

Divide spinach in each dish, making an indentation. Sprinkle water chestnuts and carefully break egg in each dish. Season with red pepper, nutmeg, salt & pepper, sprinkle with cheese.

Bake until egg is cooked through.
