Quick and Easy Vegetarian Chili - CDKitchen.com

ingredients

2 cans (15 ounce each) mixed vegetables, drained
2 cloves garlic, minced
2 cans (28 ounce each) whole, peeled tomatoes, cut up
2 cans (16 ounce each) kidney beans, rinsed and drained
3 teaspoons chili powder
1 1/2 teaspoon dried oregano
1 1/2 teaspoon cumin
1/2 teaspoon salt
1 bay leaf

directions

In a 4-quart saucepan, add all ingredients. Bring to a boil. Reduce heat, cover and simmer for 20 to 30 minutes.

Remove bay leaf and serve.
