Chili With Sweet Corn Dumplings

ingredients
1 1/2 pound lean ground beef
1 tablespoon olive oil
1 cup chopped sweet onion
1 can (15.25 ounce size) black beans, rinsed and drained
1 can (16 ounce size) stewed tomatoes, undrained
1 can (8 ounce size) tomato sauce
2 tablespoons chili powder
1 teaspoon hot pepper sauce
1 cup beef broth, plus more as needed
1 1/3 cup biscuit baking mix
2/3 cup milk (2%)
1 cup corn kernels
1/2 cup chopped green onions
shredded taco cheese mix for garnish (optional)
directions
In a large pan over medium heat, saute onions in olive oil until translucent and caramelized. Add beef and cook until brown and no pink remains.
To the pan, add black beans, tomatoes, tomato sauce, chili powder and pepper sauce. Add beef broth. Heat to boiling, then reduce heat. Cover and simmer for 15 minutes. If needed, add more beef broth to achieve desired consistency.
Combine baking mix with milk, corn kernels and green onions, stirring until just moistened. Drop dough by rounded tablespoonfuls onto simmering chili.
Cook uncovered over low heat for 10 minutes. Cover and cook 10 minutes longer or until dumplings are dry. Serve with shredded cheese.
