Gorgonzola Cheese Snacks

ingredients
1 cup Gorgonzola cheese (or any quality blue cheese)
8 tablespoons butter
1 1/2 cup flour
1/4 teaspoon salt
1/2 cup walnuts, chopped
directions
Place the cheese, butter, flour and salt in a food processor. Run until a smooth dough forms. Add the nuts and pulse a few times to blend them in. Seal in plastic wrap and refrigerate at least one hour.
Pre-heat the oven to 350F.
Roll the dough out to 1/4 inch thick. Cut out circles about 1 1/2 inches in diameter. Place on an ungreased cookie sheet and bake for 12-15 minutes (or until just starting to brown). Cool before serving.
