Ingredients:
1 envelope unflavored gelatin
1/4 cup milk
3 eggs, separated
1 3/4 cup scalded milk
2 tablespoons instant coffee
1/4 teaspoon salt
6 tablespoons sugar
1/2 teaspoon vanilla

Directions:

Soften the gelatin in milk.

Place the slightly beaten egg yolks in a saucepan and add milk slowly.

Add the coffee, salt and half the sugar and cook over low heat, stirring constantly, until the mixture coats a spoon. Add the gelatin and stir until dissolved. Chill until thickened. Beat the egg whites until foamy. Add the remaining sugar gradually and beat until stiff. Fold in the vanilla, then fold in the gelatin mixture. Pour into a mold rinsed with cold water and chill until firm. Garnish with whipped cream and shaved chocolate if desired.
