Honey-Whole Wheat Cookies

ingredients
1/2 cup packed brown sugar
1/2 cup butter or regular margarine, softened
1/2 cup honey
1/2 teaspoon vanilla extract
1 egg
2 cups whole wheat flour
1/2 teaspoon salt
1/2 teaspoon baking soda
directions
Heat oven to 375 degrees F.
Beat brown sugar, butter, honey, vanilla, and the egg in a large bowl with electric mixer on medium speed, or mix well using a wooden spoon. Stir in the remaining ingredients.
Drop the dough by rounded tablespoonfuls about 2 inches apart on ungreased cookie sheets. Bake for 9 to 11 minutes or until the edges are light brown.
Remove from cookie sheets to wire racks to cool completely.

Simple, wholesome, delightful! I use whole wheat pastry flour and only a quarter cup of honey, which made less-sweet, breakfast-able cookies.
