ingredients
3/4 cup butter, softened
1 cup sugar
1 egg, beaten
1/2 cup molasses
2 tablespoons fresh ginger, peeled and grated
2 1/2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 tablespoon cinnamon
additional sugar, for garnish
directions
Blend butter and sugar in a large mixing bowl, add egg, blending until fluffy. Mix in molasses and ginger, set aside.
Combine flour, baking soda, salt and cinnamon in another mixing bowl, stir into butter mixture.
Shape dough into one-inch balls, roll in additional sugar and arrange on lightly greased baking sheets.
Bake at 350 degrees F for 10 to 12 minutes. Cool on wire racks.
