Garden Burgers Recipe

Ingredients:
2 tablespoons extra virgin olive oil
1/2 cup chopped onion
1/2 cup chopped zuchini
1/2 cup coarsely chopped water chestnuts
1/4 cup chopped mushrooms
1/4 cup chopped fresh parsley
2 garlic cloves minced
1 1/2 cup hot water
2 tablespoons tamari or light soy sauce
1 1/2 cup textured vegetable [soy] protein
1/2 cup cookked garbanzo beans
1/2 cup sunflower seeds
2 tablespoons plain non fat yogurt
1/2 teaspoon coarsely ground black pepper
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
2 egg whites
1/2 cup bread crumbs
8 hamburger buns
Directions:
In medium skillet, heat the oil over medium-high heat, add the onion, zucchini, water chestnuts, mushrooms, parsley, and garlic.
Saute' until the veggies are tender (about 10 mins) While veggies are cooking heat the water in a small saucepan over high heat. Remove the saucepan from the heat and add the tamari.
Add the textured vege protein to a food processor and add the water mixture. Let it sit for about 10 mins until the TVP (Textured Vegetable [soy] protein) is hydrated. Add the garbanzo beans, sunflower seeds, yogurt, black pepper, cumin, cayenne pepper, and egg whites. Blend until smooth then stir in the saute'ed veggies mix well. make 4 inch patties until mixture is used up and coat both sides of the patties with the bread crumbs and chill for one hour. Cook on George Foreman grill for about 8 minutes.
