Ingredients:
1 pound sausage
5 tablespoons butter
5 tablespoons flour
1 tablespoon dried parsley
2 cloves garlic, minced
1 teaspoon salt
1/4 teaspoon pepper
3 1/2 cups milk, scalded
10 ounces frozen, chopped spinach, thawed
1 1/2 cup small curd cottage cheese
1/2 cup Parmesan cheese, grated
1 teaspoon crushed basil
2 eggs, slightly beaten
1/3 cup heavy cream
6 lasagna noodles, cooked
2 cups mozzarella cheese, shredded
1/2 cup fine bread crumbs
2 tablespoons butter, melted
1/4 cup fresh parsley

Directions:

Preheat oven to 350 degrees F.

In a large skillet over medium heat, brown sausage until no longer pink. Drain throughly and set aside.

In a medium saucepan over low heat, melt 5 tablespoons butter and blend in flour. Add dried parsley, garlic cloves, salt, pepper, and milk. Continue cooking until thickened about 3-5 minutes, stirring constantly. Set aside.

Place thawed spinach in a towel and squeeze to remove excess moisture. In a medium bowl add spinach, cottage cheese, Parmesan cheese, basil, eggs and cup cream; stir to blend.

Pour 1/3 cup sauce in bottom of 9' x 12' baking dish, then place 3 lasagna noodles, followed by half of spinach mixture and half of sausage, then 1 cup Mozzarella. Repeat layering, ending with sauce. Top mixture with bread crumbs, remaining melted butter and fresh parsley. Baked covered for 40 to 45 minutes. Remove cover for last 10 minutes to brown lightly on top.
