Chipotle-Black Bean Chili Recipe

Serves/Makes: 4
Ingredients:
1 tablespoon olive oil
1/2 cup chopped onion
3 cloves garlic, minced
2 tablespoons chili powder, preferably homemade
1 canned chipotle pepper, seeded and minced
2 cans (15 oz size) black beans, rinsed and drained
2 cans (14.5 oz size) diced tomatoes, undrained
1 can (4.5 oz size) chopped mild green chiles, undrained
Directions:
Heat the oil over medium heat in a large saucepan. Add the onion and garlic, and saute 3-5 minutes until the onion is tender; stir frequently. Add the remaining ingredients. Bring to a boil. Reduce the heat, and simmer for 15-45 minutes. (The longer, the spicier.)
Ladle the chili into bowls and enjoy. Serve with cornbread.
