Saute onion and green pepper, with garlic, in olive oil. Pour into a crock pot. Add diced green chilies. Add remaining ingredients and mix well.
Cover and cook on LOW heat setting for 6 to 8 hours. Traditionally, this is served in bowls, with hot flour tortillas, salsa, and cilantro. You can also garnish with sour cream, grated cheese, olives, and pickled carrots and jalapenos. Use as burrito filling too. nutrition
