1 onion, coarsely chopped
1 green bell pepper, coarsely chopped
4 cloves garlic, minced
1 tablespoon olive oil
1 can (4 ounce size) diced green chilies, undrained
1 jalapeno pepper, diced
7 tomatillos, diced
2 pounds lean pork, cubed and browned
2 teaspoons dried oregano
2 teaspoons dried sage
1 teaspoon cumin
1 teaspoon red pepper flakes, optional
1/2 cup beer
***Optional Garnishes***
cilantro, chopped
sour cream
Cheddar cheese, shredded
sliced black olives
pickled carrots
pickled jalapenos
flour tortillas, on the side


Saute onion and green pepper, with garlic, in olive oil. Pour into a crock pot. Add diced green chilies. Add remaining ingredients and mix well.

Cover and cook on LOW heat setting for 6 to 8 hours.

Traditionally, this is served in bowls, with hot flour tortillas, salsa, and cilantro. You can also garnish with sour cream, grated cheese, olives, and pickled carrots and jalapenos.

Use as burrito filling too.

I like using a slightly fattier pork in chile verde. Great flavor in this recipe.

This was a great recipe for my whole family. Easy to make and can be used in a variety of ways. I've also made it without the canned chilies to lower the sodium and just substituted with a few extra tomatilloes. Yum!
