Pacific Lime Mold
INGREDIENTS:
1 (4 serving size) package lime flavored Jell-O
1 cup boiling water
1 (9 ounce) can crushed pineapple
1 cup creamy cottage cheese
1 teaspoon horseradish
1/2 cup mayonnaise or whipped whipping cream
1/4 chopped nuts
DIRECTIONS:
Dissolve Jell-O in boiling water. Add juice from crushed pineapple can. Chill until slightly thickened. Beat until frothy. Fold in pineapple, cottage cheese, horseradish, mayonnaise or whipped cream, and nuts. Chill until firm.

We had lost the receipe so this is a life saver. The addition of the horseradish adds a piquant bite that completely changes this to an out of the ordinary addition to your meals.

This is s staple for our Easter brunch, and is really pretty healthy if you use low or fat free cottage cheese, and 1/4 cup light mayo instead of the full fat version. We love this recipe and used to call it "Aunt Mona's Jello Salad" til I found out the real name.
