Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

2-5 hrs
ingredients
1 (20 ounce size) crushed pineapple in own juice
2 cups low-fat buttermilk
1 large package sugar-free orange gelatin
8 ounces fat free frozen whipped topping, thawed
directions
Place pineapple with juice in a saucepan and bring to a boil. Remove from heat, add gelatin and stir until dissolved.
Stir in buttermilk and let cool for about 20 to 25 minutes. If you do not let it cool, the whipped topping will melt.
Fold in whipped topping. Do not stir too much, only until blended well.
Pour into a 9 x 13-inch glass dish and chill until firm. Cut into squares.
