Jack In The Macaroni Bake

ingredients
2 quarts water
1 teaspoon salt
1 package (8 ounce size) elbow macaroni
2 tablespoons butter or margarine
1/4 cup chopped onion
1/4 cup chopped red bell pepper
2 cups pepper Jack cheese, shredded
1 can cream of celery soup
1/2 cup sour cream
chili powder
directions
Bring water and salt to a boil in a large Dutch oven; stir in macaroni. Return to a rapid boil, and cook 8-10 minutes or until tender; drain. Rinse with cold water; drain.
Melt butter in a Dutch oven; add onion and red pepper. Cook over medium heat, stirring constantly, until crisp-tender. Remove from heat. Stir in cheese, soup, and sour cream. Stir in macaroni; spoon into a shallow 2-quart casserole. Sprinkle with chili powder.
Bake at 350 degrees F for 30 minutes. Garnish if desired.

I have made this before and it is fantastic! I have to substitute 1 and 1/2 cups of the pepperjack cheese with Monterey since I have reflux. I am going to try this with steamed bite size pieces of cauliflower instead of pasta to cut the carbs down.
