Scallion Chicken

ingredients
1/4 cup finely chopped shallots
1 tablespoon grated fresh ginger
1 clove garlic, minced
3 tablespoons light soy sauce
1 tablespoon red wine vinegar
1 tablespoon honey
2 teaspoons dark asian sesame oil
1 1/2 pound boneless, skinned chicken thighs, trimmed of fat
1 bunch green onions, cut in 3" pieces
directions
Combine shallots, ginger, garlic, soy, vinegar, honey and oil in bowl. Add chicken and scallions; toss.
Heat broiler. Line broiler pan rack with aluminum foil. Coat with nonstick spray. Thread chicken alternately with scallions on 8-inch metal skewers.
Place skewers on rack. Reserve honey mixture.
Broil chicken 5 inches from heat for 7 minutes. Turn; broil 6 minutes, until no longer pink in center.
Boil honey mixture in saucepan 2 minutes.
Transfer chicken to platter. Pour sauce over.

I mixed up 1 tsp of salt, 1 tsp black pepper, one tsp of powdered thyme and first dipped my chickens in lemon juice then rubbed them all over with this mixture. I also added an extra clove of garlic and an extra tablespoon of fresh ginger. I also added four slices of butter on top before putting into the oven. I baked at 450 for 15 mins then turned and baked another 10-15 minutes. Then I set the oven to broil so that the top was browned a bit. Absolutley phenomenal recipe!!!! Delicious!!!!!!!!!!!!!!
