Lime Chicken With Lentils And Dried Fruit

4 bone-in chicken thighs
1/4 teaspoon salt
1/8 teaspoon ground allspice
1/8 teaspoon ground red pepper
1 tablespoon olive oil
3/4 cup small green and brown lentils
3 scallions
4 large dried peaches
1/2 cup dried sour cherries or cranberries
2 teaspoons crystallized ginger
1/3 cup fresh cilantro
1 1/2 cup reduced-sodium chicken broth
4 teaspoons finely grated lime zest
1 tablespoon fresh lime juice

directions
Heat oven to 350 degrees F. Season chicken with half of salt, half of allspice and half of pepper.
In an ovenproof Dutch oven, heat oil over medium-high heat. Cook chicken about 5 minutes on each side until browned. Transfer to a plate.
Add lentils (picked over and rinsed), scallions (cut into 1-inch diagonal pieces), peaches (cut into thin strips), cherries, finely chopped ginger, half of cilantro and remaining salt, allspice and freshly ground pepper. Cook, for stirring, 2 minutes.
Pour in broth. Return chicken to Dutch oven and submerge. Bring to boil over high heat. Remove from heat, cover and bake 35 minutes.
Uncover and bake 30 minutes longer or until lentils are cooked through. Remove chicken skins.
Stir lime zest and juice into lentil mixture. Arrange lentils on serving plates, top with chicken and sprinkle with remaining chopped cilantro. Garnish with lime wedges.
