Easy Peasy Chicken Casserole
INGREDIENTS:
5 boneless skinless chicken breast halves
2 cans (12 oz. size) mixed vegetables (like Veg-All)
1 can (10.75 oz. size) cream of chicken soup
1 can (10.75 oz. size) cream of celery soup
1 can refrigerated biscuits
1 soup can water
DIRECTIONS:
In a large pot boil the chicken until cooked thoroughly. Lay the chicken breasts in a casserole dish, set aside.
In a medium size mixing bowl combine the undiluted cream of chicken and cream of celery soups with the water.
Pour half of the soup mixture over the chicken, set remainder aside.
Layer both can of vegetables into the casserole on top of the soup mixture. Cover the vegetables with the reserved soup mixture. (For convenience, prepare to this point, cover, and refrigerate for dinner tomorrow.)
Bake at 350 degrees F until bubbly. Remove from oven.
Open can of biscuits and place individual biscuits on top to cover mixture. Return to oven and bake until biscuits are done.
