Chicken Mushroom And Rice Recipe

Ingredients:
8 ounces fresh mushrooms, sliced & divided
4 large, skinless, boneless chicken breast
2 eggs, beaten
1 cup flour
little olive oil
6 ounces sliced mozzarella cheese
1 cup chicken broth
hot rice
Directions:
Place half the mushrooms in a Pam-sprayed baking pan. Dip chicken into beaten eggs & roll in flour. Brown on both sides in a little olive oil.
Place chicken on top of mushrooms in pan and arrange remaining mushrooms on chicken. Top each breast with cheese. Add chicken broth to pan.
Bake at 350 F, covered with aluminum foil, for 30 minutes. Then uncover for about 5-10 minutes. Serve over rice.
