Chicken Chili Rice
INGREDIENTS:
1/2 teaspoon olive oil
1 pound ground chicken breast, skinless, cooked
1/2 cup celery, sliced
1/2 cup bell peppers, chopped
1/2 cup onions, chopped
1 clove garlic, minced
2 teaspoons salt
3 cups water
1 can (14.5 ounce. size) stewed tomatoes
1 cup long-grain rice
1 can (6 ounce size) tomato paste
1 teaspoon granulated sugar
1 teaspoon chili powder
DIRECTIONS:
In a saucepan, heat oil over medium heat. Add chicken, celery, bell peppers, onions, and garlic. Cook until chicken is no longer pink and vegetables are tender.
Stir in salt, water, stewed tomatoes, rice, tomato paste, sugar, and chili power. Cover and simmer for 25 minutes or until rice is done. Stirring occasionally.
