INGREDIENTS:
1 pound lean ground beef
2 cans (15 ounce size) chili con carne with beans
1 can (12 ounce size) Mexican-style corn
1/2 teaspoon salt
1/4 teaspoon black pepper
***TOPPING***
1 cup corn bread mix
1 cup cottage cheese
1/3 cup water
DIRECTIONS:
Preheat oven to 425 degrees F.
In a large skillet, cook ground beef until meat looses its pink color.
Stir in the chili con carne, corn, salt and pepper. Pour into an 11x7-inch casserole and set aside.
TOPPING: In a small mixing bowl, combine corn bread mix, cottage cheese and water. Drop batter on top of meat mixture.
Bake in preheated oven for 30 minutes, until browned and bubbly.
