under 30 minutes
ingredients
1 pound bow tie pasta
1/2 cup chopped onion
1 tablespoon chopped scallions
1 tablespoon minced garlic
1 tablespoon butter
2 tablespoons olive oil
1 large chicken breast
salt and pepper
orange juice
1 cup half and half cream
salt and pepper to taste
freshly grated parmesan cheese (optional)
directions
Marinate chicken breast with salt and pepper with some orange juice (as much as needed). Let sit for at least 15 minutes.
Heat 1 tbsp of olive oil in pan and add marinated chicken. Cook both sides on medium heat while covering between turns to keep chicken tender. Remove chicken when they are done (no longer pink).
Start cooking pasta while making the sauce below. Heat up additional tbsp of olive oil to pan where chicken was cooked. Add chopped onions and butter and cook until onions are clear. Add garlic and scallions. Cook for another 2 minutes.
Stir in cream. Bring to a low boil then add salt and pepper to taste. Add cooked and drained Pasta then stir in sliced cooked chicken. Sprinkle with grated Parmesan cheese if desired.
