Apricot, Onion And Raisin Sauce

ingredients
1/4 cup unsalted butter
2 tablespoons olive oil
1 1/4 pound red onions, diced
2 tablespoons sugar
1/2 cup dry vermouth
1/4 cup cider vinegar
2/3 cup fresh apricots, coarsely chopped
1/2 cup dried apricots, coarsely chopped
1/3 cup golden raisins, rinsed in warm water
directions
Melt butter with oil in heavy large saucepan over low heat. Stir in onions and sugar. Cover and cook until onions are translucent and slightly caramelized, stirring occasionally, about 15 minutes.
Blend in vermouth and vinegar. Increase heat to medium-high and boil until liquid is reduced by half, about 7 minutes. Reduce heat to medium.
Stir in fresh and dried apricots and raisins and cook until sauce thickens, about 15 minutes. Transfer to non-aluminum bowl.
Serve hot or at room temperature. This can be prepared 2 days ahead and refrigerated.
