Baked Lamb Shanks

1 medium onion, thinly sliced
2 small carrots, cut into thin strips
1 rib celery, chopped
3 pounds lamb shanks
1 clove garlic, or to taste
1/8 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon dried thyme
2 bay leaves, crumbled
1/2 cup dry white wine
8 ounces tomato sauce
Place onions, carrots, and celery in slow cooker.
Rub lamb with garlic and season with salt and pepper. Add to slow cooker.
Mix remaining ingredients together in separate bowl and add to meat and vegetables.
Cover, Cook on low 8-10 hours. or high 4-6 hours.
