Pancake Strata With Tuna

ingredients
4 eggs
1 1/4 cup water
3 tablespoons vegetable oil
1 1/2 cup buttermilk pancake mix
1 package (8 ounce size) processed sharp American cheese, shredded
1 can tuna, drained and flaked
1 cup milk
directions
In medium bowl, beat half of the eggs with water and oil until foamy. Beat in pancake mix just until smooth.
Heat large skillet slowly, test temperature by sprinkling on a few drops of water. When drops bounce around, temperature is right. Grease skillet lightly.
Using 1/2 cup batter for each pancake, pour batter into skillet to make 8 inch round. Cook 1 to 2 minutes, or until bubbles appear on top and the bottom is golden. Turn and brown other side. Repeat with remaining batter, lightly greasing skillet before pouring batter in each time.
Layer pancakes with cheese and tuna between in a buttered 9-inch round casserole dish. Top with cheese.
Beat remaining eggs with milk in medium bowl, pour over top pancake slowly (not down side of dish), cover casserole.
Bake at 325 F for 30 minutes, or until a knife inserted in the center comes out clean. Cut into wedges.
