Ready in mere minutes, this is a tasty and simple breakfast. Just eggs, bacon, and cheese wrapped up in a flour tortilla.

2 eggs, beaten
2 slices bacon, cooked and crumbled
1/4 cup shredded cheddar cheese
1 flour tortilla
Heat a non-stick skillet over medium-high heat.
Add the beaten eggs and stir constantly until set.
Lay the tortilla flat on a microwave-safe plate. Top with the scrambled eggs, crumbled bacon, and shredded cheese.
Roll the tortilla up or simply fold in half. Place in microwave and heat for 30 seconds to melt the cheese.
Serve immediately.

I used the egg beaters from HEB and followed your recipe adding refried beans and 2 will fill up the hungrest person

I've been making this a couple times a week since it's so easy. I always add salsa to it too.

Made this more tex-mex by adding some chorizo instead of bacon, chopped green chiles, and cotija cheese
