Scrambled Eggs With Shrimp

ingredients
2 tablespoons olive oil
1 cup fresh mushrooms, sliced
1 clove garlic, peeled and minced
1 handful chopped fresh parsley
2 scallions, chopped
6 cooked shrimp, peeled and chopped
2 eggs, beaten
salt
directions
Heat 1 tablespoon olive oil in a large skillet over medium heat. Add sliced fresh mushrooms, garlic, and chopped fresh parsley and cook until soft, 2-3 minutes. Transfer to a plate and set aside.
Add 1 tablespoon olive oil to the same pan, then add scallions and saute for about 2 minutes. Add chopped, peeled shrimp and cook for 2 minutes.
Stir in mushroom mixture, then add beaten eggs, gently stirring until eggs are just set, about 2 minutes. Season to taste with salt.
