6 tablespoons butter 1 cup flour 1 cup grated Cheddar cheese 1 egg yolk 2 teaspoons water
Cut the butter into the flour until it is finely distributed throughout. Use a food processor, pastry blender or two knives. Stir in the grated cheese. Mix the egg yolk and water and stir into the flour mixture. Process or knead lightly to form a smooth dough.
Wrap the dough in plastic wrap and chill for at least 1 hour before rolling it out. The dough can be frozen at this point, then thawed and baked later.
Preheat oven to 375 degrees F.
Roll out the dough to about 1/4 inch thickness and cut into 1/4 inch wide strips about 4 inches long. Place the strips on an ungreased baking sheet. Bake 12 to 15 minutes until lightly brown.
Serving Ideas: To make cheese "coins" shape the dough in 2 cylinders about 2 inches in diameter. When chilled, cut the dough in to 1/4-inch slices and place on an ungreased baking shee. Sprinkle the cheese "coins" with caraway seeds, sesame seeds or garlic salt if desired, lightly pressing the seeds or seasonings into the dough. Bake as for cheese straws.
