Minty Brownies Recipe

Ingredients:
1 stick butter or margarine, softened
2 ounces unsweetened chocolate
1 cup brown sugar
2 eggs
1/2 teaspoon vanilla extract
1/2 teaspoon peppermint extract
2/3 cup flour
***FROSTING***
1 1/2 cup powdered sugar
3 tablespoons butter or margarine, softened
2 tablespoons water
1/4 teaspoon peppermint extract
2 drops green food coloring
Garnish: chocolate shavings or chocolate mini-chips
Directions:
Heat oven to 350. Line an 8" square pan with foil, letting ends extend above pan on 2 sides. Lightly grease foil in pan. Melt butter and chocolate in a large bowl in microwave or medium-size saucepan over low heat. Stir until blended.
Off heat, whisk in brown sugar then eggs and extracts. Stir in flour just until blended. Spread batter in lined pan. Bake 20-25 minutes until a pick inserted in center comes out with a moist crumb. Cool in pan on wire rack.
For Frosting: Beat powdered sugar, butter, water and extract in a medium-size bowl with electric mixer on medium speed 1 minute until fluffy. Beat in food color, 1 drop at a time. Spread frosting over cooled brownie and sprinkle with chocolate shavings or mini-chips.
Refrigerate about 1 hour until frosting is firm. Lift foil by ends onto cutting board. Cut brownies in squares.
