Bacon And Egg Fajitas Recipe

Ingredients:
4 Flour Tortillas
8 eggs
1/4 cup Green Onion -- Sliced
1 tablespoon Dijon mustard
Salt And Pepper -- To Taste
2 teaspoons Butter
4 ounces Canadian Bacon -- in strips
Directions:
Heat tortillas. Whisk eggs, onion, mustard, salt and pepper in a large bowl until blended. Melt butter in a large skillet over medium-high heat. Add canadian bacon and cook 2 minutes, stirring occasionally, until just beginning to brown. Add egg mixture and cook, stirring often, until set. Place 1/4 of the egg mixture in the middle of each tortilla. Fold and serve.
