Bacon And Mashed Potato Puffs Recipe

Serves/Makes: 4
Ingredients:
1 package (2.1 oz size) fully cooked bacon, finely chopped
1 package (24 oz. size) sour cream and chive mashed potatoes, thawed
1 package (8 oz. size) cheddar cheese, finely shredded
Cooking spray
Directions:
Preheat oven to 350 degrees. Mix bacon, mashed potatoes and half of the cheese together in a bowl.
Spray a non-stick jumbo muffin tin with cooking spray. Using a trigger-action ice cream scoop or two tablespoons (one to scoop and one to push mixture off), fill each cup to 2/3 full. Sprinkle with remaining cheese on top.
Place in the oven and bake until potato tops are golden brown and cheese is melted.
Serve with scrambled eggs and your favorite juice.
Cook's Tip: This mixture can be formed into patties and fried in butter until browned and hot.
