Orzo With Smoked Salmon Recipe

Serves/Makes: 8
Ingredients:
5 cups chicken broth
1 cup white wine
2 cups orzo
1/4 teaspoon salt
6 ounces smoked salmon, finely julienned
1 teaspoon dried dill
1 cup light cream
1/4 teaspoon pepper, or to taste
1 cup grated Parmigiano-Reggiano cheese
Directions:
In large saucepan over medium-high heat, bring chicken broth and wine to a boil. Add orzo and salt; reduce heat to medium. Simmer, uncovered, 12 to 15 minutes, or until orzo is just resistant to bite. Drain any remaining liquid. Set orzo aside in saucepan.
Gently toss salmon and dill with orzo. Add the light cream. Warm mixture over moderate heat, stirring frequently, just until hot. Season with pepper is desired.
Place the orzo in a bowl; put the grated cheese in a separate serving dish and serve along with the orzo.
