Zucchini Casserole

Ingredients:
2 eggs
2 tablespoons canola oil
1/4 teaspoon salt
1/4 teaspoon black pepper
2 cups shredded zucchini
2 tablespoons chopped, seeded jalapeno pepper
2 tablespoons finely chopped onion
2/3 cup biscuit baking mix
4 tablespoons shredded cheddar cheese
Directions:
In a small bowl, beat the eggs, oil, salt and pepper. Add the zucchini, jalapeno and onion; stir to coat. Stir in biscuit mix and cheese.
Pour mixture into a 24oz size baking dish coated with non-stick cooking spray.
Bake at 375 degrees F for 18-20 minutes or until a toothpick comes out clean. Let stand for 10 minutes before serving.
