Potato And Cheese Frittata

: 30-60 minutes
2 tablespoons olive oil
2 large russet potatoes, peeled, shredded
1 medium diced onion
salt and pepper, to taste
1/2 cup shredded cheddar cheese
4 eggs, beaten
Preheat oven to 400 degrees F. Heat oil in a 12 inch skillet over medium-high heat.
When skillet is hot, add potatoes, fry until crispy, golden, 15 minutes. Reduce heat to medium, add onions. Cook, stirring, until softened. Season with salt, pepper.
Pour eggs over potatoes, onions. Place skillet in oven 10 minutes until eggs are firm.
Remove from oven, sprinkle shredded cheese over top. Return to oven for 5 minutes until cheese is melted.
