Salmon Hash

Serves/Makes: 4    |   Ready In: < 30 minutes

Ingredients:
1 can (15.5 ounce size) salmon
3 cups finely chopped potatoes
3 tablespoons butter or margarine
3 green onions, finely chopped
1/2 teaspoon salt
1 dash freshly ground black pepper
2 tablespoons chopped parsley or dill

Directions:
Remove the skin and bones from salmon. Break fish into smaller pieces. Set aside.

Over low heat, saute potatoes in 2 Tb. of the butter about 15 minutes or until lightly browned and tender. Remove potatoes and keep warm.

Into same pan, melt remaining butter. Add green onions, Saute for 2-3 minutes longer. Stir in salt and black pepper.

Just before serving, add salmon. Heat through without stirring to much. Transfer to serving dish. Sprinkle with parsley or dill.
