Ingredients: ***Crust*** 5 cups corn chips 2 tablespoons butter, melted 1 egg white ***Filling*** 1/2 pound ground beef 3 tablespoons taco seasoning mix 1/2 teaspoon instant coffee granules 8 ounces cream cheese, softened and cut into small chunks 1/4 cup sour cream 1 egg 1 3/4 cup finely shredded Mexican cheese blend salsa, sour cream and fresh cilantro leaves
Directions: Preheat oven to 325 degrees F. Spray mini muffin cups with cooking spray.
Place corn chips in bowl of food processor. Pulse chips until finely crushed. Add melted butter; pulse until blended. Add egg white; mix well.
Spoon 1 T. chip mixture into each muffin cup. Use back of T. to create slightly concave indentation. Set aside.
Brown ground beef; drain. Add taco seasoning and coffee granules; stir to combine. Stir together cream cheese and sour cream and egg until smooth. Spoon cream cheese mixture into ground beef; mix well.
Spoon 1 T. filling into each muffin cup. Bake 10 to 12 minutes. Remove from oven. Spoon 1 T. shredded cheese over each cheesecake. Bake 1 to 2 minutes until cheese melts.
Slide cheesecakes out of muffin cups and place on platter. Garnish with salsa, sour cream and cilantro.
