
Chewy Double Chocolate Chip Cookies

1 1/4 cup butter, softened
2 cups sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
10 ounces chocolate chips
Preheat the oven to 350 degrees F.
Combine the butter and sugar in a mixing bowl. Beat on medium speed with an electric mixer until light and fluffy. With the mixer running, add the eggs one at a time, beating well after each addition.
In another bowl, mix together the flour, cocoa powder, baking soda, and salt. With the mixer running, slowly add the flour mixture to the butter mixture and mix until incorporated, scraping down the sides of the bowl as needed.
Stir the chocolate chips into the cookie batter by hand.
Drop the batter by rounded teaspoonfuls onto an ungreased baking sheet. Bake at 350 degrees F for 8-10 minutes or until the cookies puff up. Remove the baking sheet from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Store the cooled cookies in an airtight container at room temperature. These also freeze well.
