Glazed Blackberry Jam Cake

Ingredients:
2 tablespoons buttermilk, at room temperature
1/2 teaspoon baking soda
3 eggs, at room temperature
1 cup brown sugar
1/2 cup butter, melted
1/2 cup blackberry jam
1 3/4 cup flour, divided
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon allspice
3/4 cup mixed candied fruit
1/2 cup chopped walnuts
1/2 cup raisins
***Glaze***
1/2 cup brown sugar
1 1/2 teaspoon butter

Directions:
Preheat oven to 325 degrees F. Grease and flour a 9-inch loaf pan. Line bottom of pan with waxed paper or parchment paper.

Stir baking soda into buttermilk and set aside.

Beat eggs with a wire whisk until light. Add brown sugar, butter, jam, and buttermilk mixture, whisking thoroughly. Stir in 1 1/2 cups flour and the spices.

In a small bowl, combine 1/4 cup flour, candied fruit nuts, and raisins. Fold into batter.

Pour into prepared pan. Bake for 1 1/2 hours.

For Glaze: Combine brown sugar and butter in a small saucepan and bring to a boil.

Pour hot glaze over cake while cake is still in the pan. Let cake cool until glaze sets. Remove cake from pan and peel off waxed or parchment paper.
