Ingredients: 1/2 tablespoon olive oil 1/2 small green bell pepper, diced 1/2 small red bell pepper, diced 1/8 cup pine nuts 1/2 clove garlic, minced 1 cup rice 2 cups chicken broth 1 tablespoon chopped fresh parsley salt and pepper, to taste
Directions: Heat the olive oil in a skillet over medium heat. Add the diced peppers, pine nuts, garlic, and rice and cook, stirring, until the rice is browned.
Place the mixture in the crock pot.
Add the chicken broth, parsley, and salt and pepper to taste.
Cover the crock pot and cook on low for 5-6 hours or until the rice is tender and the liquid is absorbed.
Stir gently before serving.
