
Dusty's Best Turkey Noodle Soup

1 tablespoon butter
1/4 large onion, finely diced
1 stalk celery, chopped
1 can (49 ounce size) chicken stock
1/2 carrot, peeled and sliced
1/8 teaspoon lemon pepper
1/2 teaspoon poultry seasoning
1/3 cup dried parsley
3 cups cubed cooked turkey
3 chicken bouillon cubes
4 quarts water
1/2 bag (16 ounce size) wavy egg noodles
2 cans (14.5 ounce size) seasoned chicken stock *see note below
Heat the butter in a large saucepan over medium heat. Add the onion and celery and cook, stirring frequently, until soft.
Add the chicken stock, carrot, lemon pepper, poultry seasoning, parsley, and turkey. Bring to a boil then reduce the heat to a low simmer and let cook for 20-30 minutes.
Combine the chicken bouillon cubes and water in a large saucepan and bring to a rolling boil. Add the egg noodles and cook for 5-7 minutes or until desired doneness. Drain the noodles.
Add the seasoned chicken broth to the soup along with the drained noodles. Heat through and serve the turkey noodle soup hot.
Cook's Notes: Seasoned chicken broth can be hard to find. If you need a substitute, use regular chicken stock with a packet of dry vegetable soup mix. Or, add your own blend of seasonings to spice it up.
