Ingredients: 4 slices bacon, chopped 6 blade cut thick pork chops 3 sweet onions, sliced 1 teaspoon brown sugar, PLUS 1 tablespoon brown sugar 1/4 cup water 3 cloves garlic, minced 2 teaspoons minced fresh thyme 3 cups chicken broth 1 tablespoon soy sauce 2 bay leaves 1 teaspoon cornstarch 2 tablespoons water 1 tablespoon cider vinegar 1 tablespoon minced parsley
Directions: Fry the bacon; remove from pan.
Pat chops dry, season with salt and pepper and fry about 3 minutes per side on high. Transfer to slow cooker.
Add onions, 1 tsp. brown sugar, salt and first measure of water to fry pan. Cook about 6 minutes on medium high then stir in garlic and thyme and cook about 30 seconds more. Pour mixture over the chops in the slow cooker.
Add broth, soy sauce, remaining brown sugar, bay leaf to slow cooker. Cover and cook 8 hours on low.
Remove chops from slow cooker and keep warm. Puree solids left in cooker and mix with liquid.
Combine the cornstarch with 2 Tb. water until smooth. Mix cornstarch slurry with liquid in slow cooker and cook on high until thickened.
Add vinegar to sauce, pour over chops, sprinkle with reserved bacon.
