Ingredients: 1/4 cup butter, softened 4 tablespoons cake flour 1 pinch salt 1/2 cup orange juice 3 cups sifted confectioners' sugar 1 tablespoon grated orange peel
Directions: Fill a bowl with ice and water that is large enough to hold a large, heavy saucepan. You want the ice/water to come partway up the sides of the pan.
Melt the butter in the saucepan over medium-low heat.
Remove from the heat and quickly whisk in the flour and salt.
Return the pan to the burner and gradually whisk in the orange juice. Bring to a boil, stirring constantly, for 1 minute. Note: the mixture may look curdled.
Remove the pan from the heat and stir in the powdered sugar until mixed. Place the pan in the bowl of ice water and beat the frosting until it is the right consistency.
Stir in the grated orange peel and use as desired.
Add food coloring when you mix in the confectioners' sugar if you want a stronger orange color.
