Ingredients: 1 1/2 pound lean ground beef 2 eggs, beaten 1 slice bread, torn into small pieces 1/4 cup chopped onion 1/4 cup chili sauce 1/2 teaspoon dried thyme leaves 1/2 teaspoon salt 1 package (10 ounce size) frozen chopped spinach, thawed, well drained 3/4 cup shredded monterey jack cheese
Directions: In medium bowl blend ground beef, eggs, bread, onion, chili sauce, thyme and salt. On foil or wax paper form meat mixture into 12x8-inch rectangle. Spread spinach over meat, leaving 1 inch around edges.
Sprinkle cheese over spinach. Roll jelly roll style starting with short end. Press seam and ends to seal. Place roll in ungreased 9x5-inch loaf pan.
Bake in 325 degrees F convection oven, 1 to 1 1/4 hours (or bake in preheated 350 degrees F radiant bake oven, 1 to 1 1/4 hours), or until loaf is brown and completely set.
Remove from pan. Let loaf stand 5 to 10 minutes before slicing/cutting (should favor jelly roll look).
