
Creamy Turkey Soup

8 cups turkey stock or broth
1 pound small new potatoes, cubed, peeled if desired
4 carrots, peeled and thinly sliced
4 stalks celery, finely chopped
3 cups chopped leftover cooked turkey
1 bunch green onions, finely chopped
1 teaspoon salt
1 teaspoon white pepper
1 teaspoon dried thyme
1/2 teaspoon dried sage
1 can (12 ounce size) evaporated milk
2/3 cup all-purpose flour
Combine the turkey stock, potatoes, carrots, and celery in a large stockpot over medium-high heat. Cook for 20 minutes or until the potatoes are fork-tender.
Add the turkey, green onions, salt, pepper, thyme, and sage. Mix well and cook for 10 minutes or until heated through.
Meanwhile, whisk together the evaporated milk and flour until it is smooth. While stirring the soup, slowly add the flour mixture. Cook, stirring constantly, until the soup has thickened, about 8 minutes.
Serve hot.
