
Oven Baked Chicken

6 boneless skinless chicken breast halves
2/3 cup Bisquick
1 1/2 teaspoon paprika
1 1/4 teaspoon salt
1/4 teaspoon black pepper
Heat oven to 425 degrees F. Heat rectangular baking dish or pan, 13 x 9 x 2 inches, in oven 3 minutes. Remove pan from oven; spray with cooking spray.
Stir together Bisquick, paprika, salt and pepper; coat chicken. Place chicken in pan (pan should be hot).
Bake uncovered 20 minutes. Turn; bake about 20 minutes longer or until juice of chicken is no longer pink when centers of thickest pieces are cut.
Variations:
For Mexican Oven-Baked Chicken, decrease Bisquick to 1/2 cup; add 2 tablespoons yellow cornmeal and 1 to 2 tablespoons chili powder.
For Parmesan Oven-Baked Chicken, decrease Bisquick to 1/3 cup and salt to 1 teaspoon; add 1/2 cup grated Parmesan topping.
For Sesame-Herb Oven-Baked Chicken, decrease salt to 1 teaspoon; add 2 tablespoons sesame seeds and 2 teaspoons each dried thyme leaves, ground sage and parsley flakes.
