Ingredients: 1 medium onion, chopped 2 cloves garlic, finely chopped 2 tablespoons margarine or butter 1 tablespoon olive oil or vegetable oil 1 package (10 ounce size) frozen chopped broccoli, thawed and drained 8 eggs 1/2 teaspoon salt 1/4 teaspoon black pepper 1 cup shredded Swiss cheese 1 teaspoon dried oregano 2 tablespoons shredded Swiss cheese
Directions: Cook onion and garlic in margarine and oil in 10-inch ovenproof skillet over Medium heat about 5 minutes, stirring frequently until onion is tender. Remove from heat.
Stir in broccoli. Beat eggs, salt and pepper until well blended. Stir in 1 cup cheese and the oregano. Pour over broccoli mixture.
Cover and cook over Medium-Low heat 9-11 minutes or until eggs are set around edge and light brown on bottom.
Set oven control to broil. Broil frittata with top about 5 inches from heat about 2 minutes or until golden brown. Sprinkle with 2 tablespoons cheese.
