
Aloha Banana Bread With Macadamia Nuts

1/2 cup butter, softened
1 cup sugar
2 eggs
3/4 cup ripe mashed bananas
1 teaspoon baking soda
1 1/4 cup all-purpose flour
1 pinch ground cinnamon
1/2 cup macadamia nuts
Preheat the oven to 350 degrees F. Grease and flour a 9 x 5 loaf pan.
Combine the butter and sugar in a mixing bowl. Beat on medium speed with an electric mixer until creamed together. With the mixer running, add the eggs one at a time, beating well after each addition.
Beat in the mashed banana.
In another bowl, combine the baking soda, flour, and cinnamon. With the mixer running, slowly add the flour mixture to the banana mixture.
Stir the macadamia nuts in by hand until just mixed in.
Pour the batter into the prepared pan. Place in the oven and bake at 350 degrees F for one hour or until a wooden pick comes out clean when inserted in the center of the bread.
Remove the pan from the oven and let cool for 10 minutes on a wire rack. Remove the bread from the pan and let cool completely before slicing.
Store tightly wrapped for up to 3 days.
