Ingredients: 3 cups all-purpose flour 1 cup sugar, divided 1 tablespoon baking powder 2 teaspoons ground cinnamon, divided 1/2 teaspoon salt 1/4 teaspoon ground nutmeg 1 cup skim milk 1/4 cup butter, melted 1 egg, beaten vegetable oil, for frying
Directions: Combine the flour, half of the sugar, the baking powder, half of the cinnamon, the salt, and nutmeg in a bowl. Mix well.
In a large bowl, combine the milk, melted butter, and egg. Whisk until combined. Stir the flour mixture into the milk mixture and mix until combined. Cover the bowl and place in the refrigerator for 30 minutes.
Remove the dough to a floured work surface. Roll the dough out with a floured rolling pin to 1/2-inch thick. Cut the dough with a doughnut cutter, reserving the holes. Re-roll the dough as needed.
Heat the oil to 375 degrees F in a deep fryer or deep skillet (you'll want it at least 1-inch deep with oil).
Combine the remaining sugar and cinnamon in a bowl.
Carefully drop the doughnuts into the hot oil in batches. Cook the doughnuts for about 1-2 minutes per side or until puffed and golden.
Remove the doughnuts and holes from the oil with a slotted spoon. Immediately toss the doughnuts in the sugar mixture. Set the doughnuts and holes on a cooling rack. Store them in an airtight container.
